waste not

Some strawberry jam in the making…

and with the strawberry tops…

…strawberry vinegar!

A little gardening to pass the time…

…and a day well spent.
For the strawberry jam recipe, check here. For the vinegar, just let those berry tops marinate for 12 hours or so, strain the vinegar out and boil it for a bit (you can add some sugar here if you like, but I just left it as is with plans to mix it up with honey and oil for salad dressings this summer). Process the vinegar just as you did your jam.

after canning salsa last week, I’ve been thinking about making some jam – what a great idea for using the strawberry tops to make vinegar! The dressing is very yummy!

I’m trying to make the strawberry vinegar tonight! If it works, it’s going straight into salad dressing this very week
Thanks for the cool idea!

As soon as I opened your blog, I knew I would make it a favorite. How beautiful! My daughters and I will be trying out the strawberry vinegar….. I think it will be wonderful with our summer salads. I wonder if you could use whole raspberries?
